Reversing Hoe

The Reversing Hoe, when used on certain blocks, reverses or de-ages them.

For example, Cobblestone will become Stone, Magma becomes Lava, etc. Crops (and anything else with the Age block property) will be set to their previous age.

Configuration

Block conversions are actually done by Data Map, which can be modified by datapacks.
